Pistachios: protein, potassium and the blood pressure claims
Nutrition per 30g, the shell effect on portion size, and a careful reading of the small blood pressure trials.

A 30g serving of pistachio kernels — roughly a small handful, or about 45 to 50 nuts — supplies around 170 kcal, 6g of protein, 3g of fibre and about 310mg of potassium. That potassium figure is the highest of the common snack nuts, which explains much of the interest in pistachios. The shells matter too, for a simpler reason: they slow eating down and leave visible evidence of how much has gone. The blood pressure research that helped make pistachios famous around 2010 is real, but it is small, short-term and nothing like a treatment.
The short answer
- Per 30g: about 170 kcal, 6g protein, 3g fibre, 14g fat (mostly unsaturated) and roughly 310mg potassium — more potassium per gram than almonds, peanuts or walnuts.
- In small short-term trials, buying them in the shell slowed people down and reduced how much they ate in a sitting. That is the most practical thing about pistachios, though the studies behind it are small.
- Several small, short trials have found modest reductions in blood pressure on pistachio-rich diets. They involved few people over a few weeks. Nobody should treat high blood pressure with nuts; that is a conversation for a GP.
What is in 30g of pistachios?
These are approximate values for plain, unsalted kernels, rounded. Nut composition varies by variety, growing conditions and whether the nuts are roasted.

Two things stand out. Pistachios contain more carbohydrate than almonds or walnuts. And the protein content is high enough that they are usually grouped with the more filling nuts, a point covered in the overview of whether nuts are actually healthy.
Do shells really make people eat less?
This is the most useful practical finding about pistachios, and it has nothing to do with their chemistry.
Small feeding studies published around 2011 tested two versions of the same idea. In one, people given pistachios still in the shell ate fewer calories than people given the same nuts already shelled. In another, leaving the discarded shells on the desk — rather than clearing them away — reduced intake compared with clearing them. The mechanism is straightforward. Shelling takes time and leaves a growing pile of evidence. Nothing about that is unique to pistachios; they are simply the nut most people buy in the shell. How nut portions behave over months, rather than in one sitting, is a separate question, taken up in nuts and weight.
How much potassium is in pistachios, and does it matter?
Potassium is the nutrient most often attached to pistachios in headlines. The comparison below is per 30g, the same handful-sized serving throughout.

UK adults are advised to get around 3,500mg of potassium a day, and the NHS notes that most people can get that from a varied diet without supplements (NHS, vitamins and minerals). The World Health Organization treats raising potassium intake and cutting sodium as two halves of the same recommendation for population blood pressure (WHO). On those numbers, a 30g serving of pistachios provides roughly 9% of a day's potassium. That is a real contribution, but not a transformative one.
One important exception: people with reduced kidney function are sometimes advised to limit potassium, and for them a high-potassium nut is not a neutral choice. That advice is individual and belongs with a GP or a renal dietitian, not an article (NHS, kidney disease).
What do the blood pressure trials actually show?
This is where pistachios earned their reputation, and where reporting often ran ahead of the evidence.
A series of small controlled-feeding studies, mostly from the late 2000s and early 2010s, gave participants diets containing one or two servings of pistachios a day for a few weeks and measured blood pressure. Several reported modest reductions in systolic pressure, in some cases only under an induced stress test rather than at rest. Later pooled analyses of nut trials have reported small average reductions in systolic blood pressure, with pistachios among the nut types where an effect has been reported most often — though the pooled evidence across all nuts remains mixed. The pattern is consistent: small numbers of participants, often fewer than 30; durations of four to six weeks; controlled diets that changed more than one thing at once; and outcomes measured in millimetres of mercury, not in strokes or heart attacks. Taken together, these studies record a small short-term change in a reading, in people eating controlled diets under study conditions. That is not the same as showing that adding pistachios to an ordinary diet lowers blood pressure, and it is nothing like what a medicine does.
Anyone managing high blood pressure should work from clinical guidance and their own readings. The NHS and the British Heart Foundation both start with salt, weight, alcohol, activity and medication rather than with any single food.
Does roasting or salting change the picture?
Roasting makes little difference to the protein, fat or fibre. Salt does make a difference, and it cuts against the reason people reach for pistachios in the first place. Salted nuts can carry a meaningful amount of sodium, and UK adults are advised to keep total salt to no more than 6g a day (NHS, salt in your diet). A high-potassium, high-salt snack is a self-cancelling proposition if blood pressure is the concern.
Pistachios sit among the lower-glycaemic snacks because of their fat, protein and fibre, though the practical picture is more complicated than any single number suggests. Anyone managing blood glucose should take individual advice from their GP or a registered dietitian rather than from an article (Diabetes UK, British Dietetic Association).
What does the evidence not show?
Plainly, because this part is often left out:
- No trial has shown that eating pistachios reduces heart attacks, strokes or deaths. The blood pressure and cholesterol studies measure intermediate markers over weeks. Whether those translate into fewer events over decades is an assumption, not a result.
- The shell studies are small and artificial. They measure one sitting in a controlled setting. Whether the effect survives a month of ordinary life, or simply shifts eating to later, has not been well tested.
- Nut trials are hard to blind and often industry-funded. Participants know they are eating pistachios. Funding does not make a result wrong, but it is part of reading the literature honestly, and it is one reason this publication treats single positive trials cautiously — see how we write.
- Composition figures vary. The numbers above are rounded averages. Real bags differ by variety, origin and processing.
- "More potassium than other nuts" is a comparison, not a benefit. It describes a food, not an outcome.
The fair summary is simple: pistachios are a nutritionally decent nut, slightly higher in protein and potassium than most, sold in a format that happens to slow people down. That is useful in a snack. It is not a health intervention.
